The stat is located within the water outlet which is attached to the bottom of the top radiator hose.To change it: Gain access to it by removing any component in the way. I don't drain the system ,I simply remove the bolts holding the water outlet and it will drain from the manifold into a pan that you place under it.Remove the old gasket and clean the mating surfaces. Pay attention to the way the stat is pointing, then remove it. Place new stat the same way old one was removed, along with a new gasket. I always use a silicone sealer if a paper gasket is involved.Tightnen the bolts EVENLY so as not to crack the water outlet housing. Fill with coolant, and leave the rad cap off for 20 minutes with car running and add coolant to top the system off and bleed the air out. DONE. I hope this helps you. Mark

Replace the thermostat.
at or near the thermostat housing
Its located under the throttle body or follow the upper radiator hose til it hits a semi round housing. There is 2 bolts to remove it. First you have to drain the radiator fluid of course. I am changing the thermostat right now on my 2001 Chevy lumina and I see I will have to also remove the throttle body to get to the thermostat housing

The thermostat is located in the thermostat housing at the engine end of the top radiator hose.
right on top on the intake. it is where to top radiator hose connects to the motor.
Look where the top radiator hose connects to the engine(water pump).
In the connection at the radiatorhose and waterpump Follow the upper radiator hose out of the radiator. When that hose connects to your engine, the thermostat is in there.
