According to Haynes Repair Manual #61042 for the years 1993 thur 2001 fot the Mazda 626 & MX-6 Ford Probe the engine thermostat is located on the driver's side of the engine compartment under the air breather. It is necessary to disconnect the ram-air hose & remove the air-filter compartment to reach the thermostat. The thermostat is held in place by two bolts & an "O" ring gasket. I had to replace mine & is took a "little while" to remove everything to get to the thermostat, replace the thermostat & then replace everything back in place as it was before.

I just replaced the thermostat on my 94 626. It is located on the back of the engine where the radiator hose from the bottom of the radiator enters the engine, which is opposite from most engines. You probably need to take off the the end of the air hose going from the filter box to the injector manifold. Then just remove the two 10 mm bolts holding the hose to the engine and you will see the thermostat. Good luck
I replaced mine about a week ago. Follow the top hose coming from the radiator to a housing unit with 2 bolts. The thermostat is inside the housing.
