I have been searching for the answer to this question myself. I have not yet personally tried to use any in recipes yet but my research indicates that it can easily replace a % of regular flour in most recipes. As much as 50% or more depending on the recipe and desired results. In gluten free cooking sweet potato flour is often mixed with other gluten free flours and xanthan gum or guar gum is used to replace the structural properties of the gluten. The properties of the flour will vary depending on how it was made (were the sweet potatoes raw or cooked before being dried and ground into flour.) NASA is even doing studies on bread made with between 50% and 65% sweet potato flour and whole wheet flour since sweet potatoes are a likely cantidate for growing in space.
