It's better to ask about the number of parts (30) or chapters (114) The number of pages differs according to the number of words per page: in the Al Madinah Quran =604, but less in Azhar Quran. The English translation Quran, pages will differ too.

the Quran was written on bits of leather and leaves in the time of the Prophet Muhammad but the people who hafised the Surahs/Ayahs as revalation came. The Quran was then written in book form in the time of Hazrath Abu Baqar Saddiq RA and again by Hazrath Uthman. The Quran form we have today is in the writting for of Hazrath Uthman. Please not the quran has never changed. The reason for rewritting it was so that the non arabis could also read it in the same dilect as the arabs
