The Church began in New York. Saints moved to Ohio in anticipation of building Zion in Missouri. They were persecuted out of Missouri and ended up in Nauvoo, Illinois, a town founded by Smith. Mobs continued to rage against the church, and culminated in the martyrdom of Joseph Smith. Brigham Young became the next Prophet of the Church of Christ and led the saints to Utah to escape persecution. When they arrived in the Great Salt Lake Valley, Brigham Young proclaimed that the spot they were now at was the "Promised Land" they had been seeking.
The Mormons fled to Utah because other states chased them out. Mormons were prosecuted everywhere they went to a point where mobs killed men. Utah was a fairly empty territory where they were safe.

After the murder of Joseph Smith, Jr. & his brother Hyrum in 1844 mobs attacked LDS homes and communities near Nauvoo, Illinois, burning homes and threatening the LDS people. After a period of time the LDS people gathered together and migrated westward until they settled in Utah in 1847.
Within the Church of Jesus Christ of Latter-day Saints (commonly called the "Mormon" church), there is a doctrine of gathering, they saw themselves as gathering Israel as foretold in The Bible. In the 1800's, gathering to the main body of the church was highly emphasized and in fact expected of all new converts. Mormons emigrated (and immigrated) to be near church headquarters, which moved from New York to Ohio to Missouri to Illinois between 1830 and 1845. After facing persecution in each of these places, the Church made a final move to what is now Utah in search of religious freedom, and most Mormons followed. After World War I, new converts to Mormonism were encouraged to build up the church where they lived rather than gather to church headquarters. "Gathering" within the church now does not mean physically being together, but being united into one church body.
So, in short, individual Mormons emigrated due to the doctrine of gathering, while the main body of Mormons emigrated in search of religious freedom.
