Clouds are made up of tiny water droplets or ice crystals, usually a mixture of both.
They can turn gray when there are so many water droplets in them that it stops the sunlight from getting through and reaching the ground.

The clouds that thunderstorms from in are Nimbus clouds. Any type of Nimbus cloud can forms a thunderstorm. p.s. To divine a Nimbus cloud it is ether black or gray. But not every Nimbus cloud forms a thunderstorm only some, but keep that in mined.

this is to do with the clouds albedo (the amount of light they reflect) whiter clouds have more small particles whist dark clouds have less but bigger particles, this makes the white cloud more reflective as the particles have a bigger surface area
