Because Jewish people follow their religion (most of them do); Their belief system is called Judaism. They follow this belief system just like Christians follow Christianity, Muslims follow Islam, Buddhists follow Buddhism, Atheists follow Atheism etc... It is widely accepted that Jews are both a cultural and religious group, where traditions are part of everyday life. Judaism is the oldest of the Abrahamic religions (approx. 5,000 years ago), which includes Christianity and Islam. It is monotheistic (they believe in G-d only, as one supreme being) and they do not hold a place of importance for Jesus as in Christianity, where Jesus is the main figure or Islam, where Jesus is just a prophet. Jesus was a Jew incidentally, but those who follow his preachings are Christian.
Judaism doesn't seek converts and doesn't proselytize. However, those who sincerely wish to do so may convert to become Jewish. They should be aware that they may become targets for hate-speech or anti-Semitism.
Some people convert after having reached the conclusion that Judaism is true. There are cases of people in Mexico, Japan, Africa (etc.), never having met Jews, who simply picked up a Bible and began reading the "Old Testament," and later sought out its living protagonists. I personally have met such individuals. There are others who became disillusioned with atheism and materialism, and began seeking religion or experimenting, "tasting," and decided that Judaism is the real thing. Still others were drawn in by Judaism's ambience and tightly-knit communities which offer friendliness and warmth. This latter motivation is not the most altruistic; nor are those cases in which people convert for the sake of a spouse.
