Because crops are plants, like wheat, corn, and so on. And you can't really pick up a corn field to bring it with you when you move.

On top of that usually you can't just spread the seeds on the ground wherever you are. The soil has to suit the plant you want to grow, it has to get water enough, and you have to clear away the competing plants.

Once you've found a good spot, it's easier to stay put.
