Why do some calipers twist in and others compress in I was changing my fiances brake pads and rotors today and the rear calipers which have the parking brake attached had to be turned in?

let me guess, your fiances car was either a suzuki, Kia, or a Hyundai right? those vehicle's rear brake system are a bit different. They piston is slotted and designed to be TURNED and the PRESSED into place in the exact sequence. this can ONLY be done w/ a special tool, normally around $200, maybe $50 from a swap meet and it mediocer conditon. don't force it into place, it wont work.
