It is not a very good idea to open a kitten's eyes. It could damage a kitten's growth. Keep in mind that a kitten's eyes are fully open in four weeks. So, I suggest seeing a vet if the eyes are not developing and not opening after a long period of time.

Kittens as young as 8 weeks old can be spayed or neutered. It's not really necessary to have it done THAT early, but keep in mind that cats can start having babies as young as 4 months old. So don't wait too long! Also, getting it done when the kitten is still very young -- like 8 to 12 weeks -- is supposed to be better for their long-term health.

27 days is a little young to start feeding them solid food. Your kitten starts eating kitten food whenever it feels that it is ready. You could keep a bowl of food out, and water out if you like. At this stage, kittens may begin to explore regular cat food and might want to try it, but many start around five or six weeks. I would stick with soft kitten food at first.
10 weeks (just over 2 months) is often the best time to get rid of a kitten. You should not separate them before that, but also do not keep them for much longer than 12 weeks, as they may be too old to find homes/for people to want at that point.
If the kitten is as you say 'way to young to be away from its mother' then you can't really, cats need to be with there mum for at least 8 weeks, and during that time the mother will keep it clean, full, out of dangour and in check. If however you have a kitten under the age of 12/13 weeks and don't have it's mother you need to be patient with it. as it becomes older you will be able to hiss to deter it from behaviours you do not like, or a spray bottle of water, but while so young and dependant, just give it lots of love.
