Because S-LA is eastbound.

Our clocks are based on the sun, which rises in the east and settles in the west (the sun is moving to the west, if you want to look at it that way), so if you travel by airplane from Sydney to Los Angeles you are travelling in the opposite direction and you sort of loses time (in fact it is daylight). If you instead fly to the west, LA-S, you sort of try to keep up with the sun instead of going in the other direction.

The sun is at its highest point in the middle of the day all around the earth, and therefore the day (and also specific times) does not occur simultaneously around the globe. It probably takes the same amount of time to travel, but the time at the start and destination occur displaced.

If it's 6 in the morning in LA I believe it's already 11 at night in Sydney and will start to become morning as you fly there. If you fly from Sydney 6 in the morning it's just 1 at noon the day before in LA when you start.

Brisbane is on the East coast and uses Eastern Standard Time.

Perth is on the west coast and uses Western Standard Time.
