Not sure if by your question you mean the thermostat opens slow and the engine overheats or if you mean the engine takes a long time to warm up.
If the engine is overheating, more than likely the thermostat is stuck in the closed position and needs to be replaced before engine damage is caused because of overheating.
If the engine is taking a long time to warm up, the thermostat is probably stuck in the open position and has to be replaced so the engine can reach its normal operating temperature in a shorter time.
Check your heater core and thermostat. The thermostat may be stuck open. Does the S10 run hot or cold?
Sounds like the thermostat is stuck open. Try a new one.
As you open the drivers door there is a panel marked fuses. It is labeled in there.

open the radiator cap to release any pressure from the system. Follow the top hose from the radiator and unbolt the two 14 mm bolts holding the thermostat housing in place. Remove the thermostat out of the housing. I replaced mine with a fram 195 degree fail safe (when fails stays open not shut)thermostat. Reinstall making sure you use proper gasket and proper thermostat.

If the thermostat is stuck open, the radiator is able to cool the antifreeze faster than the engine can heat it.
