If the rubber lacing is broken/missing from underneath the backside of the hood/firewall, fumes will be sucked in by the vents below the wiper arms. Absolutely deadly.
If the engine shuts down at highway speeds I will suggest there is insufficient fuel pressure and a failing fuel pump. If all is running well at lower speeds that do not demand a large supply of fuel but the problem shows at higher speeds demanding more fuel supply this is a fuel supply problem. We had one that would vapor lock like that on hot days. the fuel line runs right along the exhaust. I'm assuming it starts back up in 15 to 20 mins. you can install a piece of sheet metal where the fuel line comes close to the exhaust

Follow the path from the exhaust port on the head. That will show you which is the exhaust rocker, which leads to the exhaust pushrod, which leads to the exhaust tappet.

If it's in the way, then yes. Don't dis-connect the lines, though. Tie the compressor up out of the way.
The oxygen sensor is located on the exhaust manifold and is the only item on the exhaust with wires going to it.
The oxygen sensor is usually mounted in the exhaust manifold pretty close to where the exhaust pipe bolts on.
