it may be because your fan is not pulling as much air as your engine needs.also the ac puts extra strain on your engine making it work harder.you may also have air in the cooling system creating hot spots in your engine.
ignition timing can also cause a vehicle to overheat.
Either the thermostat was not the problem, or you put it in backwards.
The thermostat will not open properly when installed backwards. The coolant will not flow and the engine could overheat.
the one possibility that i can think of is that your thermostat is stuck in the closed position not allowing the water to circulate threw the engine

You most definately unpluged the sensor wire. It's a single red wired that plugs onto a sensor just passed the thermostat.
