theres a resistor where the heter core lines conect to fire wall on passenger side in engin comp. it looks like a water heater fuse
because the water pump is not working properly....
You might as well change the Thermostat because it is comparatively inexpensive, but test the water pump to see if it needs to be replaced.

Most of the time it is because the thermostat has gone bad and is not opening at the proper temperature. Cure: replace thermostat. If the thermostat has been replaced, flush the radiator. Buildup of residue in the bottom of the radiato0r will cause overheating, but it is maintained over heating, not temporary.

Not sure if by your question you mean the thermostat opens slow and the engine overheats or if you mean the engine takes a long time to warm up. If the engine is overheating, more than likely the thermostat is stuck in the closed position and needs to be replaced before engine damage is caused because of overheating. If the engine is taking a long time to warm up, the thermostat is probably stuck in the open position and has to be replaced so the engine can reach its normal operating temperature in a shorter time.
I've had the same problem before and after a new thermostat, but have never had a problem with over heating. I have a feeling the gauge is very sensitive.
the head could be warped BUT try removing the thermostat because that could be a bad thermostat try running it without it if its a blown head will not have compression and the oil will look milky
