No chance !... Once a file is deleted, the memory previously used by that file is marked as 'free' space. As you say, you've '...used it since the files were deleted...' - I can almost guarantee the deleted files will not be recoverable !
All you need to do is paste the mod .class files and other needed mod files back in the jar file. This happenes because the .jar file is the file that gets deleted and replaced and e.g 1.4 mods are not compatible with 1.5 game so it helps to not crash the game.
JAR files are simply ZIP files with a different extension. Just chnage the extension from .zip to .jar.
