At this point, you can peel the eggplant or leave the skin on. Stand the eggplant up on end and carefully slice it from top to bottom. Stack the slices on top of each other and slice the whole stack several times top to bottom, then turn the stack and slice horizontally. The more cuts you make, the smaller your pieces of eggplant will be.
