muscle weighs more than fat. your weight may not change because you are gaining muscle mass, which weighs more.
It really all depends you could weight 135 and be normal or weight 90 and be normal. Height makes a change in this the taller you are you might weight a little bit more. Muscle also can make you weigh more if you exersise a lot you could just be gaining muscle weight.

It is difficult to determine whether your weight loss is fat or muscle. You should be able to tell whether weight loss was water in a few days. If you follow a sensible diet and the weight comes back on, it was probably just water. Don't just look for weight. you also want to look at bodyfat levels. Your best bet would be to get your bodyfat & muscle mass tested. I would need to know your height, weight, waist measurement, bodyfat, etc to give you any real weight info.
Yes the amount of exercise will affect a horses weight. If the horse is overweight it will slowly lose weight through exercise, just like humans. If the horse is a good weight and is being fed correctly then instead of weight lose you'll get muscle gain and the horse may go up in weight as muscle is heavier than fat.
