It really depends on your physical status prior to the fast, as well as how active you are during it.

Generally, after about three days without food, the human body will begin to draw on its reserves of fat. The average adult (Depending on how active the adult is, as well as their metabolic rate) needs to consume between 1500 and 2500 calories per day. One pound of human fat is equal to about 3500 calories; so, between the four days of that week of fasting that your body is drawing on its fat reserves, you should end up about one or two pounds lighter.

However, there are some health risks to such a fast. After your body begins to draw on its fat reserves, you may begin to feel feint, lightheaded and weak. Dizziness is also common, as is an increased desire to sleep, in order to better reserve calories. Also, if your body should deplete its fat reserves, it will begin to consume the only thing left; that is, your muscles. Once this atrophy begins, your muscles may become sore, and you will become increasingly weak, and if left without food, your body will eventually shut down and die.

However, a seven day fast isn't likely to have overtly adverse effects. A healthy adult can usually survive well over a month without food. Fasting is a frequent part of many religions, including Judaism, Christianity, Hinduism and Buddhism, and is preformed by many of their practitioners on a regular basis with few or no health complications.

But overall, going a week without eating probably wont noticeably alter your appearance.
