Actually, Canada's multiculturalism is mostly in its major cities of Toronto, Montreal and Vancouver. For example, just over 50% of the people in Toronto weren't born in Canada. However, outside of a few major cities, Canada is a fairly caucasion nation.
Race is a tricky issue, and it depends how it's divided up - should "White" be considered one race, or should it be subdivided by nationality (English, Irish, German, French, etc.) Here's what I can tell you based on the most recent figures (the 2006 census):
The census allows you to identify as either a single nationality or multiple nationalities. Among single nationalities, the highest was "Canadian" (i.e., ancestors living in Canada for long enough to have no real ties to any other nation) with 22.77% of respondents. In terms of single respondents, this was followed by English (4.99%), French (3.58%), Chinese (3.16%) and Black (3%).
Now, these stats are a bit misleading, since certain nationalities are much more liked to be among a mixed-nationality than a single answer. In terms of multiple responses, here were the combined figures for people who either answered this as a single response or as one or multiple responses:
Canada (32.22%)
English (21.03%)
French (15.82%)
Scottish (15.11%)
Italian (4.63%)
Chinese (4.31%)
First Nations/Native (4.01%)
Ukrainian (3.87%)
Dutch (3.31%)
Polish (3.15%)
East Indian (3.08%)
These stats raise even more questions - for example, only 1.54% of people claim First Nations as their only nationality while 4.01% claim to have at least partially First Nations blood, what figure should be used in stats?
However, I can definitely give the main answer to your question - the most prevalent race in Canada is Caucasion/White/European. I've often heard that roughly 85% of Canada is white, but as you've seen, it's difficult to pull these statistics out when the census technique is so muddled.
Next in terms of races, I'd put East Asian (Chinese, Korean, etc.) followed by South Asian (India, Pakistan, etc.) followed by Black (mostly Caribbean).

It is possible to assume that 'second' refers to the date of statehood of the state, as in which state came second. This would be Pennsylvania, which was admitted as a province in December 12, 1787. Pennsylvania follows Delaware as the first state, New Jersey behind as third and Hawaii joining last in 50th.
