Muslim's fast on Monday and Thursday because it is a sunnah of their prophet, Muhammad. Fasting on Monday and Thursday is an option so you don't have to fast on these days as well as Ashooraa (celebration for prophet Moses), and the 10 days of thul-hijja( also a sunnah).
