Balancer bulls are those bulls that are a cross between Gelbvieh and Angus/Red Angus. The Balancer breed in itself is a registered trademark of the AGA (American Gelbvieh Association) and are typically those cattle that are 1/4 to 3/4 Gelbvieh and 3/4 to 1/4 Angus or Red Angus, respectively. The cross has been developed to take advantage of heterosis resulting in the cross of the two breeds to create cattle that have excellent carcass value from Angus genetics with the high growth, leanness, muscle and high fertility typical of the Gelbvieh breed.

Can you get a pure black calf from a baldy hereford and a black angus?

No. A Hereford already has a white face, so no use calling Herefords "baldy herefords." The genes for a white face is dominant to that of a coloured face like black, red, tan, etc. So, if you bred an Angus bull with a Hereford cow you will ultimately and always get a calf that is black with a white face. The only time you will get a small (16%) chance of getting a purely black calf is if you breed an F1 black baldy cow with an F1 black baldy bull. Another 16% will give you an all black calf that is horned (from the genes of the calf's grandsire or granddam, which ever was a Hereford (non-polled)).

However, if you breed an Angus bull to an F1 black baldy cow, you will have a 50% chance of getting a pure-black calf.

How are highland cows better protected against cold weather than jersey cows?

Highlanders have thicker, coarser hair which I believe is double-layered that protects them from the elements. Highlands are also beef cattle, which means they are able to have more of an internal body covering (like fat) than Jerseys will. Jerseys are dairy cattle, they are typically much thinner, less fatter and grow have the density of a coat of hair like Highlanders are capable of. Jerseys can survive the cold alright, but only if they have a good shelter to turn to during winter storms and good quality feed to help keep them warm. Highlands just about need none of this, they can survive with just a few trees or a wind-break fence to take shelter in if the weather gets particularly nasty, and don't need such high-quality forage or grains to survive in the cold. Moderate- to low-quality hay is good enough for them during the winter. (Of course, low-quality hay shouldn't be fed to them if they are in poor condition, like any animals going into winter.)
