How do you make hummus?

Drop into a food processor:

I can chick peas drained

1/4 - 1/3 C tahini (I like mine pretty rich)

2 peeled cloves of garlic (I like a lot of garlic)

Salt to taste

Begin pulsing, drizzling in lemon juice to taste. If it isn't blending because it's too dry and it already has all the lemon flavor that you want - use the reserved liquid from the chick peas to moisten. Blend until it reaches the smoothness that pleases you, this can take several minutes.

To serve, place the hummus in a low sided bow or platter, placing it around the circumference of the bowl, leaving the center clean. Pour olive oil in the center before serving.

Is hummus a Jewish food?

Hummus is certainly Middle Eastern, and has always been popular in Syria, Jordan and Egypt. While it's certainly a staple in Israel, it didn't necessarily originate there. Like many Middle-East foods, it's virtually impossible to trace its origin as the cultures are ancient, movement and migration has always been fluid, and the ingredients are native to the entire region.
