What did St. Patrick say the three leaves of the shamrock symbolized?

The Trinity (three in one).
Patrick used the shamrock to help teach the Trinity - one leaf, three parts, one God, three persons.
The shamrock represents the Holy Trinity, in that the three leaves signify the Father, the Son, and the Holy Ghost. Each of the three leaves is part and parcel of the overall shamrock, symbolizing the unity of the three parts of the Almighty.
St Patrick used the shamrock to illustrate the mystery of the Holy Trinity. According to Roman Catholicism this supernatural mystery (a mystery the human mind can never fully understand) teaches that there are three separate supernatural Persons or beings, God, the Son (Jesus) and the Holy Spirit which coexist as One. The shamrock illustrates this mystery by having three leaves, each representing a Person of the Holy trinity, but all on the one stem.

Is it an insult to wear red on St Patrick's day?

No, even though the traditional color associated with St. Patrick's Day is green, it is not mandatory to wear green or to celebrate St. Patrick's Day. It would have to be assumed that if someone wears red or some other color on St. Patrick's Day, that is purely a fashion related choice about what that person feels like wearing or thinks will look good (or possibly, it could be related to the remaining supply of clean clothing) rather than being some kind of rejection of St. Patrick's Day.

If you wear green why do you get pinched?

I myself do not wear green nor orange on Saint Patrick's day because either colour worn on that day would show an allegiance to one side or the other of this stupid rivalry between the Catholics (green) and the Protestants (orange). These two camps have been murdering each other (and innocent bystanders) for hundreds of years. It is totally sick. If you think I am wrong, try wearing the wrong colour at one side or another's parade or football game in Britain.

Wearing green or orange on that day would be like being in Africa and wearing something that identified oneself with either the Hutu or Tutsi tribes in Africa which have been hacking each other to death on and off for decades.

You could wear their colours, but when you know what has been associated with the whole thing, why would you want to? So don't let anybody tell you you have to wear a certain colour.

Did the start of St. Patty's day come from Ireland?

Absolutely not! To the real Irish it is St. Paddy's Day.

"Patty" is the familiar form of Patricia and is never, never, never used to refer to a man. If a mans name is Patrick the familiar for is "Paddy".

Why do the Americans celebrate st Patrick's day?

Why we celebrate St. Patty's day is because the patron saint of Ireland, St. Patrick is believed to had died on that day. The first offical celebration took place in Boston in 1767. Then New York followed along. What really made st. Patrick's day boom was a potatoe famine in Ireland killing 1 million people back in Ireland.
