Sorry, but in all likelihood, you won't. There have been hundreds, probably thousands, of small gunmakers in the Val Tropia (V.T.) region of Italy. Disassembly by the owner of an O/U is generally limited to removing the forearm, opening the gun and unhooking the barrels. Further than that would best be left to a gunsmith that can find his way through a shotgun without instructions.

If you mean for the single shot break action shotgun, yes, there are a couple of companies making stocks with pistol grips. They may have separate grips or removable stocks. Or you could cut one off, as many have done before.
Choate Machine and Tool and ATI Gunstocks make gripped stocks, and the ATI one appears to have a removable stock section, which would give you grip only.
Remember the overall length must be at least 26" with an 18" barrel to be legal, for a shotgun. Shorter requires a $200 stamp and federal approval.
