I am a beginner skier, and I personally don't think it's that hard (YET). It will get trickier as you go along and do harder trails, but it all really depends on the person.

If your DIN setting is 11 and you feel that they release too early you should go to your local ski shop, with your skis, and tell them the problem. They will ask you several questions such as height, weight and skier type. You need to answer these questions as honestly as you can, if you are heavier than you would like to be, do not lie about your weight as this greatly affects your DIN setting. Also if you feel you are a true expert (can ski double blacks like they're nothing, even in your sleep... theoretically, I do not suggest trying it) then consider saying you're skier type III+, this will also increase your DIN. If this doesn't solve the problem there might be something wrong with your bindings so go ask your local ski shop to check them out.

What exercises should you do for downhill skiing?

Downhill ski racers need a strong butt and legs. Therefore, focus your exercises on your lower half. You want to bulk up your thighs and rear-end. Most professional downhill ski racers end up with "tree stumps" for legs. Focus on strength training and do squats in particular. The "wall sit" is also a great exercise. Put your back to the wall and bend down until your knees are a ninety degree angle. Try to maintain this position with your back to the wall for a minute. It is very difficult, but builds strength. Work on the Leg Press machine as well. Hamstring curls are also valuable since strong hamstrings help to protect your ACL. Basically do several different leg strengthening exercises to improve leg muscle balance and definition You also want to have core strength in your abdominal muscles because your ski turns originate from your body's center. Do sit-ups daily and crunches daily. Balance exercises (stand on one foot on a Bosu trainer) help to build balance - obviously - and confidence for those times when you might get a bit out of control on the slopes. You also need to have endurance. Strive to run on the treadmill and on the elliptical trainer. However, don't do too much cardio because you don't want to be too lean.

What I usually do, as a beginner skier is point the toes inward, it slows you down a lot the more inward you go.. Just don't trip. This is called a snowplow and at slower speeds it is very effective but another way to stop which is better at higher speeds or if you need to stop quickly is called the hockey stop. Hockey stoping takes practice but once you get it, it is a lot easier. This is where you turn very quickly to the side and dig your edges into the snow, again don't trip and don't try to stop too fast, if you do I can guarantee you will fall.
