Optionally, peel the sweet potato. Personally, I like the peel myself. Cut the sweet potato up into 1.5" square chunks. Immerse into boiling, well-salted water. Test with a fork -- when the fork easily passes through the chunk, drain in a colander. Transfer to a bowl, and mash with the back of a kitchen spoon.
