Sweet Potato Cheesecake

Monday, November 19th, 2007

2 cups Vanilla Wafers crumbs (1/2 pound cookies crushed)

1/3 cup melted butter or margarine

3 8-ounce packages cream cheese, softened

1 cup sugar

1/2 cup light brown sugar

3 eggs, lightly beatened

1 15-ounce can sweet potatoes, drained and puréed

1/4 cup heavy cream

1 tablespoon vanilla

1 teaspoon ground cinnamon

1 1/2 teaspoons ground nutmeg

1 teaspoon fresh lemon juice

2 cups sour cream, at room temperature

Heat the oven to 350 degrees. Butter a 9 1/2- or 10-inch spring-form pan and coat lightly with flour. Toss Vanilla Wafers crumbs with the melted butter until evenly moistened in medium bowl. Press the crumb mixture into bottom and extend 1 inch up the side of prepared pan. Bake for about 12 minutes. Let the crust cool. Reduce the oven temperature to 325 degrees. Beat the cream cheese until smooth in mixer bowl with electric mixer. Beat in 3/4 cup sugar and brown sugar, then beat in the eggs, in 3 additions until the mixture is thoroughly combined; scraping down the side of bowl occasionally.

Combine puréed sweet potatoes, heavy cream, 1 teaspoon vanilla and the cinnamon, nutmeg and lemon juice until well-blended in another medium bowl. Add sweet potato mixture to cream cheese mixture and beat until combined. Wrap foil loosely around the bottom and up the side of the spring-form pan. Pour the batter into prepared pan and set it in a large baking dish or roasting pan. Place in the middle of the oven and pour 1 inch of hot water into the baking dish. Bake the cheesecake for about 70 minutes, or until the edges are firm and the center of the cheesecake is still slightly shaky.

Combine the sour cream, with the remaining 1/4 cup of sugar, and 2 teaspoons of vanilla. Remove the cheesecake from the water bath and pour the sour cream topping on to cheesecake. Spread topping evenly and continue baking for 10 minutes. Transfer the cheesecake to rack and let cool for 1 hour. Remove the foil and refrigerate the cheesecake at least 4 hours, or overnight. If you desire, remove the cheesecake from the bottom of the pan by sliding a metal spatula under the crust to loosen it completely, then use 2 large spatulas to transfer the cake to a serving plate.

Well there have been debates going on, on whether the protagonist is Charlie or Lil, but I believe that Charlie shows more protagonist qualities as he manages to actually believe that his brother is better than he is, he believed that his brother will be a somebody, and he sacrificed his own needs and wants to make sure that Buddy would be successful in his life. He fights and fights against the antagonist, which is poverty, until he beats it and ensures his little brother a life filled with accomplishments and achievements. Moreover, Charlie shows compassion by the way he acts when he sees Buddy. Although, the story is only made up of words, these words reflect real images that fill our hearts with empathy and love. While reading the part of the story, where Buddy's visit to Charlie takes place, love is portrayed unimaginably, because although Charlie lives in poor condition he feels that all of Buddy's accomplishments are his own, he doesn't care about his own life conditions, he cares about his other half, the half he raised on behalf of his parents, the half that he can't imagine seeing in his shoes living in poverty. Lastly, the part that shows protagonist qualities of Charlie the most, is the part when he holds the paper bag for Buddy, because he does not want him to look poor or from a lower social status, he wants him to fit in with the higher social ranks. In the whole story, and this specific part, Charlie plays the role of the hero where he saves Buddy from poverty and low social ranks.

Sweet potatoes grow best with compost and an organic potato food will increase their size. I start mine from sweet potatoes rooted in water in the winter. When the vines grow from the potatoes, I cut them off the tuber and root them in water. I then plant these rooted vines in the garden after all danger of frost is past and given about 100 days to grow, they will produce new sweet potatoes. The last month or so, do not water the potato vines and this will increase the size of the new tubers.

Boil sweet potatoes in water to cover for 10 minutes. Remove and allow to cool. Peel potatoes and cut into 1/4 by 1/4-inch thick batons.

Meanwhile in a 5-quart pot or Dutch oven fitted with a candy or deep-frying thermometer, (or in an electric deep fryer), heat oil over medium-low heat until the thermometer registers 300 degrees F. Make sure you have at least 3 inches of space between the top of the oil and the top of the pan, as fries will bubble up when they are added.

Increase the heat to medium-high and add fries, a handful at a time, to the hot oil. Fry, stirring occasionally, until potatoes are soft and limp and just begin to brown, about 3 to 4 minutes. Using a skimmer or slotted spoon, carefully remove fries from the oil and set aside to drain on paper towels. Let rest for at least 10 minutes or up to 2 hours.

When ready to serve the fries, reheat the oil to 350?F. Transfer the potatoes to the hot oil and fry again, stirring frequently until browned and puffed, about 1 minute. Transfer to paper lined platter and allow to drain for a minute.

Combine the brown sugar, salt, cayenne and cinnamon in a large bowl. Add the fries and toss to coat. Serve immediately.

No, we just discussed this in our bio class its actually a tuberous root, not to be confused with the term tuber. Potatoes on the other hand are stems, but there is a difference.
