Whoever answered above is an idiot and has clearly never played Legend of Zelda OoT. There is a postman in Hyrule Field. He wants the Bunny-mask, but I have forgotten how you run up to him since he's so freaking fast....
But if you're talking about when to give him the Bunny-mask it is at nightfall/night somewhere around Lon-Lon Ranch to the left of the gate.
How do you defeat the first boss on ocarina of time?
The desert boss (a large Stalfos, though much scarier) is pretty straightforward but it can be pretty difficult to get started. The fight happens in two stages. The first stage takes place in a large circular arena with the boss in the center. Get on your spinning top item and ride the rail around the edge of the room to gain speed then launch yourself towards the center of the area. You're aiming for the base of the exposed spine. Just before you reach the spine jump so you hit it a little ways up - it won't work if you hit the spine while on the ground. Repeat this a few times. Each time becomes more difficult to reach him as undead zombies pop up to get in your way, effectively becoming an impromptu pinball table. Avoid them as best you can and hit the spine with the same method as above until he sinks into the sand. The sand drains away to reveal that you are atop a tall platform with the head of the giant Stalfos. You seem to think it's over, but you're wrong! You're knocked off a high platform to the ground when the head springs into action, and you begin to tackle stage two. Stage two is all about avoiding being hit while getting close enough to ram into the head. You ride your spinning top on the inside track, jumping to the outside track (and back) to avoid spikes, fireballs, etc. When you get close enough to the skull and collide with it in mid-air it will fall to the ground. Follow it, getting off your spinning top and attacking with your sword. It will rise back up after a short time, so hit it a lot. Repeat the ride/collide/sword attack cycle until it dies.

When you beat the game, you can save your file and start over a second time. Just go to the Temple of the Ocean King on Mecay Island and enter the temple and 1: you go north and hit the light bulb "its on the ground and its purple"hit it with your sword and run as fast as you can and go east use your boomerang and light the other torch with the right side torch Tip: don't get hit by the phantoms or you will lose time (witch is bad...) so the when you do light both of the torches the fire on the south side will go away. run through the way and remember don't get hit!!!!! when you get to the end of the way turn west and stand on the little square and then run up the stairs witch is on the south side and grab the key. now go to the light bulb that was purple and just tap the door next to you and there just go down the stairs. Well, it's easy!
Go to Whittleton (forest realm) and find a patch of leaves. Get out your whilrlwind and line it up with a patch of leaves, then blow! Hopefully you'll get a demon fossil! You might get rupees or a heart. Other treasure items you can get by this method are star fragments, bee larvae, wood heart and stalfos skulls. Keep doing it until all of the leaves are gone. If you win (again), Ingo will lock you in. Just get on Epona, line your self up with the fence, and jump out of Lon Lon Ranch!

--If you mean in Majora's Mask, you have to wait until after you've beat the mountain area, get the powdered keg 'licence', and get rid of the huge boulder on the first day. Then you go there and talk to Romani and she'll tell you that aliens were attaking the cows. Go meet her around 2 AM and defeat the aliens, and she'll give you the horse.

You can beat him in three ways:
1. Cast Din's Fire and turn around since he will fade into the ground and reappear behind you.
2. If you run out of magic use the Megaton hammer since Dark Link cannot imitate that weapon. You'll connect with more hits but you could also take more damage as a result.
3. Equip the biggoron's sword and start jabbing. Thing is Dark Link will freeze you, jump on your sword and take a swing at you. You won't be able to block it either.

I think that that's exactly right. It depends on where you want to start, like what is so awesome? the music? the storyline? the game play? all of the above? I know it's awesome, and I think that it's storyline from humble beginnings on the Nintendo Entertainment System (NES) has really exploded out into the open. Some monkeys should come and build the bridge for you (the stick they leave behind is an item in the trading sequence).
