Honestly it really all depends on if you want to tank or dps.
Dk's take a long time to get good at tanking because they can't use a shield. But if tanking is for you then i suggest you do the following with your gear.
1: Get gear with Dodge and PARRY rating. Since cataclysm also look for gear with MASTERY rating on it too.
2. Gem your gear with MASTERY mostly. Also for strength, stamina and dodge rating.
For your dps:
1. Use MELEE the most. (meaning don't use your spells often) Very occasionally use Bloodstrike and very rarely use Deathstrike. Avoid using anything else.
On the other hand if you decide to go frost then do the following:
Gear:
1. Look for gear with CRIT and HIT rating.
2. Gem your gear with STRENGTH and occasionally hit rating
For your dps:
1. If your level 85 then you must produce 10K dps or better for raiding and for doing zul aman's and zul grubs. If not then try and pull as much dps by doing: HOWLING BLAST x3, PLAUGESTRIKE x2, FROST STIKE x2
2. Make sure when you're specing that you take the talent Runic Power Mastery, and max that. This will give you THIRTY extra runic power, making it easier for you to do the sequence above.
So there you have it, again it really all comes down to if you want to tank or dps. Obviously tanks will do more dps because they are speced to do so, but frost DKs (when speced, geared and trained right) can do the same. If your level 85 try and go for purple items with a high item level. 355 is ideal item level for raiding apparently so if you're geared pretty well then by all means have a shot at Bastion of Twilight (known as BOT) or Black Wing Decent (known as BWD)

Death Knights have two specs that are DPS. Frost and Unholy.
In Cataclysm, Blizzard is making the Blood tree the tanking tree. However, currently (since Cataclysm is not out yet) all the trees can be used for tanking to an extent. Frost is one of the better ones at holding aggro. Blood tanks can self heal while tanking pretty good. Unholy is the least capable of the three.
Blood Plague, Frost fever are the two main diseases that all death knights can access. Using talents, Unholy death knights can place crypt fever on their victims automatically via blood plague or frost fever. The Unholy talent Unholy Blight was changed recently to be a disease on the target rather than an "aura" type of spell. So if you are an unholy death knight, you have access to 4 diseases. Other death knights could access unholy blight as it is higher in the tree, so all other death knights can access 3 if talented right.

You will want to practice with friends before you do the real thing. The best way to do this is by going to holding threat over 1 healer and 1 dps (recommended a rogue, mage, or warrior) or 3 dps. To tank as a death knight, simply use blood pressense (I believe its blood now) and go blood spec. Death and Decay is your best pulling spell for groups, and Icy Touch is your best boss/single pull. Blood Boil is good to use, but not right away. Death Grip who is attacking the group. Using your pet will only add dps, so don't focus on your pet. Summon it during boss battles if you wish. PLEASE NOTE: I HAVE NOT PLAYED MY DEATH KNIGHT SINCE THE PATCH, I WAS A VERY GOOD TANK BEFORE IT AS A FROST SPEC. PLEASE NOTE: I HAVE PLAYED MY DEATH KNIGHT AND IT IS HARD TO TANK BUT I GOT USED TO IT, BUT YOU STILL SHOULD PRACTICE.
Unholy single target: Icy Touch, Plague Strike, Blood Strike, Scourge Strike, Blood Strike, Scourge strike, Death Coil, Horn of Winter, then from this point just use whatever's ready from death coil, scourge strike and blood strike, get a glyph of disease, and whenever your diseases are almost over use pestilence. Unholy AoE: Death & Decay, Icy Touch, Plague Strike, Pestilence, then from this point just use whatever's ready from death coil, scourge strike and blood strike, get a glyph of disease, and whenever your diseases are almost over use pestilence. Blood: Icy Touch, Plague Strike, Blood Strike, Blood Strike, Death Strike, Death Strike, then whenever you have death runes or blood runes use Blood Strike, whenever you have a frost rune and an unholy rune use death strike, once again you want glyph of disease, and keep the diseases up with pestilence.

Death Knights are the first so-called Hero class in World of Warcraft. They are called a Hero class because they start at a higher level (55) than all the other classes. Another perk is after completing their starting quests (which is in a phased area, separate from the rest of Azeroth), they have Epic Mount Training (free) and are in all rare type armor. The armor is good enough to last a Death Knight up until he/she gets to Northrend content if the player chooses. Death Knight have their own unique "power system". It is in two parts, Runic Power and Runes. Runes are divided into 3 types, Blood, Frost, Unholy. You gain Runic Power by using abilities that cost Runes.
