You cannot study 'surgery' specifically at most univeristies in Australia, you first need to complete an undergraduate degree (this can be anything you want, usually recognised by "Bachelor of.....') and then study a postgraduate degree called MBBS (Bachelor of Medicine, Bachelor of Surgery). This will mean that you are a qualified doctor. You can then specialise as a surgeon by working under the guidance of an experienced surgeon in a hospital.
However, you will want to study an undergraduate degree that is linked to your final outcome in some way, usually something to do with science or health. To do this, some useful subjects to study at high school would be any science subject (Biology, Chemistry, Physics) and certainly English. Sometimes, Maths is required for science based degrees.
In high school there are very few subjects that will transfer into higher education. Take AP science classes, learn to write a good research paper ( 10-20 pages with proper format), and get good grades. These skills will get you into a good 4 year college or university for your BS and prep you for medical school. I can't stress enough getting good research and writing skills accomplished. I am in high schools and find that many people in their Jr and senior years do not know how to write a term paper. You will be required to know how to do this in college. Get a tutor if your high school doesn't offer the classes needed.
GCSE wise you'll need A*-C grades in Chemistry, Biology, English & Maths. They're the main ones I think.
1 Physics, 2 Chemistry 3 Maths, 4 Biology, and 5 English are essential subjects for anyone interested for a career in Medical Science ie: Doctor, Medical Engineer etc.

In school you don't have to read a certain amount of books, but its good to read books to help with studies of subjects.
School can be boring, given that some subjects are really dry, and that you may not be able to see now how some subjects will be useful to you in the future. However, school is not mean. Some teachers may be mean, as may some students, but - overall - school is there to help you better yourself, and to prepare you for life in the real world.
