Temperature is controlled by the thermostat. If it's getting too hot, replace the thermostat. 210 is a good temperature so don't worry about it. Quite a few different problems can cause an engine to die or loose power. If you aren't getting a computer code, check the fuel, possibly the pump or filter, but don't limit your search to just those items, and don't replace parts until you've verified that they are bad.
