If you are only considering the mainland portions (not islands), Europe stretches from latitude 36°00′ 15″ N (Punta de Tarifa, Spain) to latitude 71°08′02″N 27°39′00″E (Kinnarodden, Norway) and longitude 9°29'56.44 W (Cabo da Roca, Portugal) to longitude 66°18'05"E (the easternmost point of the Ural watershed - and thus mainland Europe). There are various islands that are grouped with Europe that lie further north, south, east, and west.

Two caveats:

1) Ireland is most definitely part of Europe but is a rather large island separate from the mainland. If you use Ireland to define the westernmost extent of Europe then the western edge is longitude 10°28′46″ W (Dunnmore Head, Dingle Peninsula, County Kerry, Republic of Ireland).

2) The exact boundary between Europe and Asia is actually a bit ambiguous but for the purposes of this question it was assumed to be the watershed divide of the Ural Mountains.
