They grow in the ground.
They were first cultivated in Africa and Asia about 8000 B.C. and are now are a primary agricultural commodity in West Africa and New Guinea. They are now however also grown in many other countries.

True yams (Dioscorea spp.) are not grown in the US, but some kinds of soft, orange-flesh varieties of sweet potato (Ipomoea spp.) are referred to as yams in many parts of North America. Many varieties of these "yams" are indeed produced in the southern US, particularly in the state of Louisiana.
