Yes, you can use flour for thickening soups, Sauces and Gravies instead of cornstarch, but it takes longer to cook than cornstarch. Also it does not mix with water as smoothly as cornstarch and easily gets lumpy. It does form a smooth paste when mixed with oil or melted butter or fat.

To mix flour smoothly with water put flour and cold water in a jar, place the lid on and the give the jar a vigorous shake.

Yes, and it comes out even better. In general it is smoother, silkier, and thicker. You lose a little bit of the grainy wheat taste, but I usually don't want that to mask the sauce or soup flavor anyway. You have to use LESS corn starch than wheat flour as it is a STRONG thickener. Also you have to mix it with cool liquid before adding to the sauch or gravy or it clumps. Add little bit at a time and stir, to make sure you don't overthicken.
