Best Answer

Cook it in the crockpot on low all day or use a meat tenderizing hammer and unseasoned meat tenderizer.

Traditional Solution:

Cooking low and slow is the answer. This can be accomplished in a crock pot, or in an oven. Try to avoid heating above 300° F, and cook for four or more hours. Using a smoker or charcoal/wood fired barbecue also works well. Just keep a meat thermometer handy, and know how to maintain a constant temperature.

Some types of meats need to be simply grilled or sauteed, but the tougher cuts of meat need to be cooked in a crock pot or even a pressure cooker depending on how tough it is. Some cuts of meat need to be trimmed of fat, while others can optionally be left with it to enhance the recipe.

Why is keeping cows relaxed important to their value of meat?

Docile cattle give tender meat. When cattle are stressed out, levels of cortisol and adrenalin hormones surge through their bodies into their muscles making the meat dark and tough. Dark meat or animals that are "dark cutters" have tough meat, and is the kind of meat consumers won't buy.

What are the clues to meat tenderness?

There are lots of ways to tenderise your meat. If you are marinading your meat or making a caserole then citrus juices (lemon, lime, orange) and alcohol (Wine, spirits and beer or vinegar) will help to tenderise your meat (be weary of how much vinegar you use as it can destroy the flavour). Also, if you are making a caserole, the slower you cook the meat the more tender it will be at the end. Try using a slow cooker.

Will a blind cow be tough?

Probably not as a rule, there are a lot of different reasons for a cow to be tough, surprisingly, the best piece of meat I ever enjoyed was from an old milk cow. I don't think that blindness is a reason in itself for the meat to be tough, unless you are teaching her to read. That might be kinda tough.
