Also remember that there are more than one species of yeast. so bakers yeast will not spoil food since it is used for fermenting alcohols and making breads and pastries rise as well as molding cheese. The spore walls allow the yeast to survive under less than desirable conditions (lack of nutrients, heat, cold). When conditions are right, the yeast will grow and 'spoil' the food.
