The Bible did not provide a specific number. But by its description it must have been several hundred thousands. Judges 7:12 And the Midianites and the Amalekites and all the children of the east lay along in the valley like grasshoppers for multitude; and their camels were without number, as the sand by the sea side for multitude. And Gideon was able to defeat these multitude with only 300 men,

(7:16 And he divided the three hundred men into three companies, and he put a Trumpet in every man's hand, with empty pitchers, and lamps within the pitchers. ) that lapped water as a dog

(7:5 So he brought down the people unto the water: and the LORD said unto Gideon, Every one that lappeth of the water with his tongue, as a dog lappeth, him shalt thou set by himself; likewise every one that boweth down upon his knees to drink. 7:6 And the number of them that lapped, putting their hand to their mouth, were three hundred men: but all the rest of the people bowed down upon their knees to drink water. 7:7And the LORD said unto Gideon, By the three hundred men that lapped will I save you, and deliver the Midianites into thine hand: and let all the other people go every man unto his place.)

Addendum: Judges 8:10 Now Zebah and Zalmunna were in Karkor with a force of about fifteen thousand men, all that were left of the armies of the eastern peoples; a hundred and twenty thousand swordsmen had fallen.

Calculating from this passage, the armies of the eastern peoples (Midianites) began with 135,000 men. (See also John Gill Commentary - "for there fell an hundred and twenty thousand men that drew sword; besides infirm men, women, and children, which may reasonably be supposed; so that this host consisted of 135,000 fighting men").

What weapons did Gideon use to defeat the Midianites?

If my interpretation of Judges chapter 7 is correct; The 300 soldiers of Gideon were armed with empty pitchers, lamps and trumphets to do battle with the " Midianites and the Amalekites and all the children of the east lay along in the valley like grasshoppers for multitude; and their camels were without number, as the sand by the sea side for multitude"

Why did Gideon defeat the Midianites?

With only 300 soldiers Gideon and his men frightened the Midianite armies with trumpets and lights, the Midionites flee and are defeated by Israel. With 300 hundred trumpets blaring away as well as three hundred lights being waved about it was enough to frighten the Midianites, so much so that they were not sure who the enemy was and so fought among themselves. They were pursued by the Isaelites, their princes captured and killed and their army defeated.

How many men were on Israel's army when David killed Goliath?

Gideon's army started with 32,000 men. But then The Lord told Gideon, "The people who are with you are too many for Me to give the Midianites into their hands, lest Israel claim glory for itself against Me, saying, 'My own hand has saved me.' "Now therefore, proclaim in the hearing of the people, saying, 'Whoever is fearful and afraid, let him turn and depart at once from Mount Gilead.' " 22,000 men left leaving Gideon with only 10,000 men left. Then again the Lord told Gideon he had too many men, again and again. The Lord said this until only 100 men remained. To answer your question Gideon started with 32,000 men, but ended up fighting the Midianites with only 100. To read a full account read Gideon, Chapter 7.

What is the Gideon's symbol and its meaning?

The symbol used by the Gideons who distribute Bibles in many places throughout the world is the pitcher with a lamp within. It is taken from the account of Gideon in the book of Judges. Gideon won a battle against the Midianites partly because they had lamps concealed in pitchers which were broken at the last minute at the moment of attack. As God had orchestrated the victory the pitcher is a symbol of God's Word being the 'sword of the' Lord' in all its power. Also Gideon was willing to be used by God.
