I used to be a ramp attendant at an airport and I would see all types of pilots.
There were alot of short pilots there as well. There is such a diversity of aircraft selection out there that anyone that can operate a vehicle would be the right size to operate a plane. Also the seats adjust, pedals adjust on certain planes.
I have also seen some pilots build there own planes (called custom builds). Based on my knowledge, I believe anyone any height would be able to flight an aircraft that is right for them.
However, I understand there are certain height requirements for military aircrafts.
