Are you using motor oil for diesel engine API CH not (gas engine) API SJ,SL, or SM?
An engine might sound like a diesel at operating temperature if the engine was a diesel or if there was an issue with the manifold. Sometimes gases escaping the manifold cover could cause the engine to sound different.
Could be a number of reasons.. you could be losing compression, you could have a clogged diesel particulate filter (if so equipped), worn components... you'd need have have it inspected to narrow down the cause.
my oil pressure goes up while I'm driving and back down when I stop what could cause that

It could be that the diesel fuel injectors have failed that is why you are getting low pressure on your engine. I actually found it to be the fuel rail inector pipes were loose and I put new rubber hoses on also. Problem fixed

There could be a number of reasons for this... electrical fault, faulty compressor clutch, low pressure in the AC system due to a leak or blockage in the system, faulty low pressure switch.... The last one is the one to check first. You simply unplug the wire from the accumulator, and jump a wire between the two contacts. If your compressor clutch engages, then the low pressure switch is operating as it's supposed to. If it doesn't, then you have a bad low pressure switch.
