Hmmm... That is strange. I have a five speed, v6 95 Mazda B4000, and it does not hesitate at all in the damp. The only time it ever hesitates is when I am hauling something up a hill at a high speed. Perhaps your issue is related to the automatic transmission in them?

The low-speed fan will come on when your engine temperature reaches 180 degrees. The high speed fan will come on. When the engine temperature reaches 200 degrees.
Maybe misfiring on cylinder 6. Or 4. Take the car to autozone, they scan codes for free!
Amount of fuel burning is directly proportional to the amount of power produced. The power produced by the chemical reactions can be converted for producing the high torque or high speed of an engine. basically the speed of an engine will vary w.r.to the amount of fuel injection for a given engine geometry.
I'd guess the engine is overheating.
It has a top speed limiter. Once you reach that speed it will shut the engine off
The PCM limits the top speed of the vehicle by cutting back on the fuel if the engine RPM's are high enough to damage the engine

If the a/c will not come on you need to check the a/c clutch relay and the following can cause the a/c to shut off..... When the accelerator pedal is fully depressed. When cranking the engine. At high engine speeds. When the engine coolant temperature becomes excessively high. When operating Power Steering during low engine speed or low vehicle speed. When engine speed is excessively low. When refrigerant pressure is excessively low or high.
the engine runs at a faster rate than when the idle speed is lower.
