If stuck closed--vehicle will overheat very rapidly and coolant will blow out of top of radiator If stuck open--vehicle will not get to normal operating temp.
Under normal conditions a modern vehicle should not overheat when the air conditioning system is on. The first steps to investigating this condition are ensuring correct coolant level, condition, flow and thermostat actuation.
Possibilities: Cooling fan not working. Low on coolant. Clogged radiator, radiator hose or block.
Around 90-100C or 195-210F, if it's running any warmer than that try doing a coolant flush
You may have a cracked head or bad head gasket. The car will start to overheat from lack of coolant if you don't check the radiator coolant and refill it, if it's low. You need to get the car repaired or replaced before it breaks down and leaves you stranded .

Make sure the radiator fan is operating properly. You should also check your coolant your radiator might need flushed or it may need burped
A bad thermostat can cause an overheat. A bad temp sensor can show an overheat when the temperature is normal.
