Water
A bit more:
I never could find a bread recipe that I was really happy with; they just never seemed moist enough. So I finally 'developed' my own bread recipe, which makes wonderful, moist, tender bread. Part of what I did that gives such good results is using 1 1/3 cup whole milk and 2/3 cups heavy cream in place of water or plain milk, and I also add more shortening to the recipe, too. And I have never made a dry loaf of bread since.
It adds fat and moisture to the recipe. Fat adds and carries flavor.
old dough has time to ferment a bit, which adds flavor to the bread.
1) They are a binding agent; they hold together the mixture of the dough whilst preparing prior to baking 2) They add oxygen to the mixture
Liquid in a recipe adds moisture and prevents the food from drying out.
Because milk has lactose which is a type of sugar. It also adds moisture. Both sugar and moisture are needed for mold to grow.
Sugar acts as a tenderizer during mixing, it absorbs water and slows the development of gluten that can make the dough tough, it is source of nourishment for yeast. the dough rises faster and is more consistent. Sugar gives bread a softer texture and adds to the colour
It binds the dough together-- also adds some flavor.
no, but it adds stability to the gluten matrix along with enhancing flavor as well. Forget to add salt to your bread dough and not only will it be bland but it will mess with it rising properly as well..
Milk The protein in milk softens, contributes moisture, and adds colour and flavour to baked goods. Itβs a double-whammy in terms of function, as it gives the dough or batter strength and structure, as well as adds tenderness, flavour and moisture.
Yes, but it will affect the taste of the recipe. Brown sugar is just sugar with molassass.
Bread making is a balance between the various ingredients. Too much or too little of any one of them alters the result. Too little water and the batch will not mix or knead properly, resulting in a hard lumpy unappetizing loaf. Too much and it will be sticky and glutenous and unappetizing.
It adds moisture / lubricates the food
