That's not a bad achievement and sounds pretty 'civilized' to me! But then, I like sake and I also know how tough it can be (and how tough it used to be) to grow rice, even in a fertile area, such as the Indus valley was...
The average businessman/merchant/shoemaker/city-dweller probably didn't have time to grow rice or to ferment the stuff to make booze, so...there must have been some form of city-dwelling...will this get you credit on your thesis? THIS IS SO WRONG
