Oh - back in the day when echt (real) chocolate meant that it was made from cocoa butter and not from palm kernal or other vegetable oils along with emulsifiers - usually lecithin, used as cheap alternatives to additional processing. The Weston Group, that still owns Loblaw's, Superstores etc. bought out Willards (in 1954, which remained a subsidiary and continued to manufacturer chocolate bars under the Willards name until December 1968, when it ceased operations and Neilsons - also a Weston subsidiary - started making the Sweet Marie).

Consider the difference between real chocolate and today's chocolate, the same as the difference between real butter and margarine. BUTTER VERSUS OIL IS THE KEY WORD HERE. WHY? Because real chocolate melts easily and liquefies, like butter, which meant in the heat the chocolate developed a white film (absolutely not harmful or spoiled in any way) that consumer's didn't like. Just like consumers didn't like lopsided tomatoes that are now genetically engineered, so they are all round.

All of the following chocolate and bars were available throughout the 1950s.

Willa'rds (established in 1914 Toronto) was famous for its "Sweet Marie" (made with nougat, caramel and roasted peanuts covered in real Milk Chocolate). Also, famous for Baseball cards in its chocolates.

Neilson's (established 1893 began making chocolate bars in 1906) famous for "Eskimo Pie" first ice cream dipped in chocolate, "Crispy Crunch," "Malted Milk" and "Jersey Milk-Milk Chocolate." Weston bought out Neilson in 1947, but Neilson still continued to manufacture its chocolates as a subsidiary (Mr. Big

was NOT introduced until 1977).

Laura Secord (started in a kitchen apartment in 1913 Toronto). By 1950, they had 96 stores in Ontario and Québec. They were (are) famous for their gift boxed chocolates.

Moirs (established 1873 in Halifax, Nova Scotia) "Pot of Gold"

Purdy's (established 1907 in Vancouver), famous for its "Yardlong Box of Chocolates." There was a men's clothing store next door and the owner made a box of chocolates that could be used as a gift box for ties.

Ganong (established in St. Stephen, New Brunswick in 1873), claims it made the first 5 cent "chocolate milk nut bar" in 1910, was famous for "Pepts" (chocolate covered peppermint rolls). Ganong also made the famous "Pal-o-Mine" chocolate bar (fudge, coconut & nuts covered in chocolate).

How do you put the caramel in the caramilk bar?

this is how its done.... they take a caramilk bar mold and turn it upside down. then they pour the chocolate in the mold to form the top of the chocolate bar. then they let it cool. then they pour the caramel on the chocolate. once that is cool and has hardened.... they pour the rest of the chocolate on it, forming the bottom of the bar. once that is cool, they chocolate bar is complete. the real trick to this is turning the chocolate bar mold upside down and essentially making the bar from the top to the bottom.
