Could be several reasons. Is coolant level very low? If so, probable leak in cooling system. Check hoses. If coolant not low, may well be cooling fan not operating. If fan is working and coolant level is ok, possible thermostat problem. May be stuck closed.

Its inside the coolant overflow tank/reservoir (its the plastic reservoir where you pour in your coolant). Look on the side (the side that faces the engine) and you'll see an electrical wire is connected by a harness. That's your coolant level sensor.
You have an air bubble. The coolant level sensor is high in the block and you need to bleed the suystem of air in order to turn the light off. Not doing so will create hot spots in the engine block and eventual failure.
Make sure it really is low on coolant by checking the coolant when engine is off. If the level is up to par, then the sensor may be bad.

I have the same van It is perfect, but I think the problem that makes it overheat is either not enough coolant or a clog in the coolant tubes. Take it to a mechanic and sask them to check that out for you.
