There's a pipe plug just above the oil filter. The readings might fluctuate a little more, but it would work fine.
Just read somewhere else that it's at the back of the motor under the distributor.

A tan/white wire goes from the sending unit to the fuel gauge typically on a (example) 1985 Chevrolet Silverado 305 tbi.

That would be the oil sending unit.
On the drivers side of the block, right above the oil filter.
It's usually screwed into the intake manifold towards the front, near the thermostat housing.
To tell you what the temperature sending unit part number is I would need more information. It all depends on what type of vehicle it is in, and where that models actualy hooks up at.
The oil pressure sending unit is located under the hood, way in back of the engine, under the distributor on the drivers side. Removal requires removal of the distributor.
On drivers side screwed into the back of block behind intake with 1wire plugged on to it.
