Try the radiator. if it has a cooling fan it is usually in the radiator. short across the two wires should make the fan come on.temperature sending unit should be on driver's side head between #1 and #3 or #3 and #5. it is usually hidden well under the exhaust manifold. on an '81 it should be a one wire get up with only a flat top pin hanging out. it is often broke off or the wire melted beyond recognition. quite often though alot of people relocate them to the intake because of the likelyhood of damage. passenger side temp senders were on the corvettes. if there is a temp sender in the radiator (only with the option of electric fan) that would have been the fan trip sending unit. few made with this setup, design was given up quickly and the fan trip was moved to the thermostat housing. but rule of thumb (as long as your engine hasn't been monkeyed around with) Chevy usually sticks the sending unit to dash in the head for 96 and older.
