Varies by vehicle. An older vehicle, it might just be a coolant temperature gauge, or some might have a small light on the gauge to get your attention which is triggered by that gauge peaking.
On current medium- and heavy duty vehicles, where the engine will shut down to prevent damage from overheating, the red engine shutdown light will come on, and this might be accompanied by a specific coolant level light in the instance where it's due to low coolant. This is also typically accompanied by an audible alarm and an in-dash display which will show a message such as "low coolant level".
That would be two separate warning lights on some vehicles. One for the engine coolant temp being too hot and the other would be for engine coolant level is low.

There will be a light that comes on situated in the dashboard.
This is called the Temperature light or gauge
Your engine is too hot.
Broken vacuam hose, check PVC hose and power brake hose. One possiblity is:you need to check the coolant fluid level. DO NOT OPEN the radiator when it is hot. Hot Coolant WILL scald! Let the engine cool down and check the coolant reservoir. Re-fill the reservoir slowly away from your face. Cold coolant going into a hot engine will boilback and spurt out of the tank. If refilling the coolant does not remedy the problem, it may be more serious and need a mechanic.
It means that you engine is overheating. Check your water coolant level and oil levels. DO NOT continue to drive the car until the problem is resolved, an over hot engine will cease and after that happens you will need a new engine.
Engine is Hot, Coolant is not HOThere engine is hot means above the engine operating temperature, Coolant is not hot means coolant in the radiator is not hot and the coolant is below or withing the operating temperature.i think there is no water blow out from the radiator cap if you have this problem then the following will not apply to your case.* water is not circulating through the radiator, either half of the pumped water is circulating through the radiator or another half circulates through the engine block because of thermostat. so please check the engine thermostat for proper function.
Stuck thermostat Replace coolant fan module if the fans do not come on.
Look on the side of the coolant overflow bottle. There should be a low mark for the coolant for a cool engine, and one for a hot engine.
I've heard that it blinks when coolant is low and stays on when coolant is too hot.
Actually, the heat regulator for the engine is the thermostat. It closes off the coolant when the engine is cold and circulates more coolant when the engine is hot.
When it ran low on coolant, the head overheated and warped. Now you have hot exhaust gasses venting directly into the engine's coolant system through the damaged head gasket that gave up when the head warped. You'll need to have the head resurfaced. That means, pulling the head(s) and everthing that is in the way. If there are very many miles, you may as well do the valves and guides while you've got the head(s) off.
That's the engine coolant temperature. If it's a light and it's lit up, then it means your engine is running too hot. Better check your coolant.
