There are several subway lines that stop at 23rd Street in Manhattan. From west to east, they are the:
C and E trains (of the A-C-E, the blue line) at West 23rd Street and 8th Avenue
1 train (of the 1-2-3, the red line) at West 23rd Street and 7th Avenue
F or M trains (of the B-D-F-M, the orange line) at West 23rd Street and 6th Avenue
N, R or W trains (of the N-R-Q-W, the yellow line) at East 23rd Street and Broadway
6 train (of the 4-5-6, the dark green line) at East 23rd Street and Lexington

The C or E train (of the A-C-E, the blue line) to 23rd and 8th Avenue
The 1 train (of the 1-2-3, the red line) to 23rd and 7th Avenue
The F train (of the B-D-F-M, the orange line) to 23rd and 6th Avenue
The N or R trains (of the N-R-Q-W, the yellow line) to 23rd and Broadway
The 6 train (of the 4-5-6, the dark green line) to 23rd and Lexington
On the C or E trainYou can catch the Downtown C or E train at Penn Station. It's just one stop: 34th Street (Penn Station) to 23rd Street.
On the 1 trainAgain, you can catch the Downtown 1 train at Penn Station. It's just two stops: 34th Street (Penn Station) to 28th Street to 23rd Street.
On the F train1) Take the Uptown A or C (NOT the E) from 34th Street (Penn Station) to 59th Street-Columbus Circle.
2) At 59th Street-Columbus Circle, transfer to the Downtown B or D trains to 47th-50th Street-Rockefeller Center.
3) At 47th-50th Street-Rockefeller Center, transfer to the Downtown F train to 23rd Street.
On the N or R trains1) Take the Uptown A-C-E or Uptown 1-2-3 one stop, from 34th Street (Penn Station) to 42nd Street (Times Square). All six of these trains (the A, the C and the E, and the 1, the 2 and the 3) stop at 42nd, so it doesn't matter which one you take.
Also note that the 42nd Street stop on the A-C-E is actually not Times Square. Since the A-C-E runs up and down 8th Avenue, while the Times Square Station is at 7th Avenue, the 42nd Street stop on the A-C-E is actually 42nd Street-Port Authority Bus Terminal. BUT, there is an underground tunnel connecting the A-C-E to the Times Square Station, so you can transfer without exiting the subway system.
2) At the Times Square Station, transfer to the Downtown N or R trains to 23rd Street. Note that the R train will not stop at 23rd Street from 11 PM to 5:30 AM.
On the 6 train1) Take the Uptown A-C-E or Uptown 1-2-3 one stop, from 34th Street (Penn Station) to 42nd Street (Times Square). All six of these trains (the A, the C and the E, and the 1, the 2 and the 3) stop at 42nd, so it doesn't matter which one you take.
